A traditional Chinese tea and one of the most popular types of teas in China, produced through a process including withering the plant leaves under strong sun and oxidation before curling and twisting. Oolong originates from the Fujian region but has various degrees of oxidation, ranging anywhere from 8 to 85%, depending on the variety and production style.  Most oolong teas, especially those of fine quality, involve unique tea plant cultivars that are exclusively used for particular varieties. Varieties include Wuyi Rock Tea, Anxi TieGuanYin Tea, Phoenix Dancong and Taiwan Oolong.
